The rapid increase in fermentation tanks and building expansion and the many awards already won, including being named the number three top new brewer in the world by Ratebeer.com just a few days ago.   How many months ago did we start this?  About nine; really can't believe it.&lt;br /&gt;&lt;br /&gt;We are now up to 26 beer styles brewed and we distribute in Utah, Idaho, Virginia, Washington DC and parts of Colorado.&lt;br /&gt;&lt;br /&gt;How can a small company like this do something like that.  I think it is first from the support of community as well as a buy in from all involved in the vision of the project.  Most people thought the idea was crazy but when customers, cities, employees, our contractor, distributors, suppliers, other craft brewers and many others buy into that vision with a drive and passion things happen.  Thanks to all of you!&lt;br /&gt;&lt;br /&gt;We are well beyond our year five business plan and making so many tasty beers I really cannot decide which one I will have with dinner tonight.  It is a weekend at home between two weeks of launch efforts in Virginia, Washington DC and Colorado. We thought the nine brands of beer we had built up would meet demand for at least a couple of months. WRONG! We stepped up our game and purchased a used 40 barrel tank which should arrive next week and three new tanks due to arrive in 4 to 8 weeks. We released three Exponential beers this week (Imperial Red, Sour Apple Saison and Brown Rice Ale) and put a forth one in casks, which should be ready in about two more weeks.&lt;br /&gt;&lt;br /&gt;We have re-brewed the Cross Fever Amber Ale (estimated restock 6/4), Hopulent #2 (6/14), Spiral Jetty, Copper Cone, Brainless and will get the Stout and others going next week. We did a double batch of Hefe (Wheat beer), a nice Chocolate malt dominant Porter, a Cherry Smoked Malt Belgian Strong Ale (we are going to age this fine beer in special wood casks) and yesterday we brewed a Sour Apple Saison. In a weeks time we have filled the brewery and neighborhood with some nice aromas that has some around here completely baffled. The Sour Apple Saison was the kicker for aromas. Spices form Spain, Morocco and other near and far locations added to the end of the boil made that brew something special in the air. We may age some of this one in wood cask too.... Wednesday we dry hopped one of the pales and even more dry hoping planned for tomorrow and Friday. Things went much smoother.&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Brewed:&lt;br /&gt;Deep copper colored Pale Ale&lt;br /&gt;Malts: Nearly 80% Maris Otter with CaraMunich I and II and some Light Munich in the mix.&lt;br /&gt;Hops: Columbus, Centennial and Amarillo&lt;br /&gt;O.G. of 17.9 degrees Plato.&lt;br /&gt;&lt;br /&gt;Peter promptly let me know that yesterdays IPA came in at 20.7 and not 19.3 degrees Plato. It wasn’t totally smooth sailing, but Kevin got it done.  Overall, it was a great day of brewing.  Many thanks to all of our pals who stopped by to say hi, lend a hand, fix a pipe and snap a few shots too!  Pretty cool how a boiling kettle can bring people together.&lt;br /&gt;&lt;br /&gt;We brewed an IPA born from boatloads of Maris Otter, Briess two row, Caramel 20, and Munich premium malts.  The hops: Columbus, Chinook, Centennial, and Simcoe in the kettle.   OG: 19.3 degrees P, if I recall correctly. If you want to see something green, check out our siding material made from recycled paper and plastic material and the LED lighting we installed throughout the building. Then we got started on the 20 barrel (620 gallon) Fermentation tank. We received approval for our building permit on December 30th! Our pal and GC, Mark, wasted no time getting busy. I took this picture on January 5th, and sorry to all those hoping that Epic could deliver Utah’s first drive thru, it just couldn’t happen for so many reasons… &lt;/div&gt;&lt;div&gt;&lt;br /&gt;The front of the building was lopped off so we can make an extension to the west and increase the ceiling height to allow for the brand spanking new brew house and some of the fermentation tanks right up front. The Stout got going last week and is looking good. This week we hope to do a very special barrel aged Belgian style strong ale. If the flavors work out, all I can say is look out, it is going to be a treat. We will be shooting for about 10% ABV with this one and if the concept is proven to be tasty, ask to see the full size cask once we get underway at the brewery.&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;We have been at the City a lot these days. Support for the project is very encouraging and we hope to have the building permit in three weeks or, hopefully less. Next week we have our first visit from JVNW to discuss the install of our brew house with our contractors. Things are moving but never fast enough. &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;&lt;br /&gt;Something special that just says spring beer to you? Brewed so far: two versions of Wheat, two versions of Porter, two Pale Ales, one Lager, two versions of Amber Ale and this week the first IPA will be brewed in duplicate too.  The Wheat and Porters are bottled up and in the cellar. It is not much to look at yet. We will start the clean out this week and demolish the building in part as soon as we can; followed by reconstruction and a major face lift. Epic is doing something that hasn't happened in Utah since prohibition; you can imagine the zoning issues along with State and local laws that complicate the issue of where we will brew and sell our &lt;a href="http://www.alcbev.state.ut.us/Liquor_Laws/liquor_laws_affecting_visitors.html"&gt;"Heavy Beer" &lt;/a&gt;from. We can't be too near a park, church, school, playground, etc. It is not impossible but it has taken &lt;strong&gt;&lt;em&gt;way too long&lt;/em&gt;&lt;/strong&gt;.&lt;br /&gt;&lt;br /&gt;At any rate we have two possible downtown locations in the works and we hope at least one will play out this week. He said it was “hard work drinking all the different styles of beer in the heat wave” in the Pacific Northwest.&lt;br /&gt;&lt;br /&gt;We got some good leads for hops, malts and hard goods. Kevin found some new experimental malt that seems just up Epic’s creative alley. Kevin traveled to Ohio see a never installed system, but it had several issues that made it just as costly as a new system in the end. Used equipment was the initial plan, but we believe in the support of beer aficionados in the beehive, so we have increased the budget and narrowed our plans down to three suppliers of NEW systems. This pub has good family friendly dinning too. Sisters is a mountain town just 20 miles east of Bend. Bend’s Deschutes Pub was packed on Wednesday night and from the photos you see they earned some medals...we enjoyed Obsidian Stout, some pales, and how can we not mention &lt;strong&gt;ALL SIX IPA's&lt;/strong&gt; on tap...schizzle! Six IPA’s in the small town of Bend and some say the 801 can't handle 3 at one shop, don't despair because we're bringing it!&lt;br /&gt;&lt;br /&gt;Then somewhere in East Oregon, we nearly rear-ended this guy! Phil gave us a great tour and reviewed our plans with us.&lt;br /&gt;&lt;br /&gt;Then off to Eugene to hook up with Paul, who does some consulting for us. He is at &lt;a href="http://www.ninkasibrewing.com/"&gt;Ninkasi &lt;/a&gt;now helping with a major expansion project. They where adding a dedicated &lt;a href="http://www.flickr.com/photos/nostri-imago/2856343464/in/photostream/"&gt;whirlpool kettle&lt;/a&gt; when we visited and we saw the plans for even more. They just do local distribution in bottles and kegs!!
